                              Fermented Ginger Carrots

 

Shred ½ cup of ginger

grate ~2-4lbs of carrots

 

Mix these together in 1T Pink Himalayan Sea Salt.

Now pack into quart jar andcover with filtered water (be sure that

all ingredients are covered by the water and that the water

level is 1in below glass rim). Cover and let sit out at room

temperature for 3-5 days. Sample and see if you want a

longer fermentation. Now put in refrigerator and enjoy!

 

 

 

 

 

Liz's Magical Kraut

 

1 head of green cabbage, chopped

1 head of radicchio cabbage

¼ cup of dulce (a type of seaweed)

2 Anaheim peppers

1 golden beet

¼ cup shredded ginger root

5 cloves of garlic, minced

1 bunch of green onions, chopped

 

Mix all in large bowel and sprinkle in 2-3T of pink himalayan sea salt. Start packing into 2 quart jars. Allow 10min to go by so salt can extract water from the cabbage and start filling your jars. Now pack it all in more and add more of your mix into the jars. Keep packing until it is 2in below edge of jar, then cover with water, leaving 1in headspace. Cover and let sit out at room temperature for 3-5 days. Sample and see if you want a longer fermentation. Now put in refrigerator and enjoy!

 

 

 

 

 

 

 

 

 

Purple Kraut, Keeping it simple!

 

1 head of Purple Cabbage, chopped

1Tb Pink Himalayan Sea Salt

 

Toss together in a bowl. Keep mixing (with very clean hands that haven't been soaked in chemical laden soap) for 10min. Singing, laughing, and uplifting conversation with others at this time is encouraged. Now pack your mixture into a quart jar. Push it all down as hard as you can and pack more in. If the water from the cabbage isn't covering it all, add a little more water (if you add water prior to all the water extraction from the cabbage, your jar will overfill and your counter will be a mess). Cover and let sit out at room temperature for 3-5 days. Sample and see if you want a longer fermentation. Now put in refrigerator and enjoy!
